Greek Yogurt Cheesecake Cups

These yogurt cheesecake cups will definitely leave you drooling. It’s a sweet treat that your taste buds will surely enjoy!

Ingredients

CRUST

  • 1/2 cup rolled oats

  • ¼ cup chopped Pecans

  • 2 tbsp Coconut oil

  • 1 tbsp Erythritol

FILLING

  • 70g Cream Cheese

  • 150g Greek Yogurt

  • 1 egg

  • 3 tbsp Erythritol

  • ½ tsp Vanilla Extract

  • ½ cup fresh Berries

  • Fresh Mint for topping

Preparation

  1. Preheat the oven to 180 degrees.

  2. Put the oats and nuts in the food processor and blend until coarsely chopped.

  3. Add cinnamon, sweetener, and coconut oil.

  4. Transfer the oatmeal mixture to each muffin cup. Press the mixture down using a spoon. Put the muffin tray in the oven and bake for 10 minutes.

  5. Meantime, using a mixer, beat the cream cheese until smooth. Add the Greek yogurt, sweetener, egg, and vanilla. Mix until smooth.

  6. Remove the muffin tray from the oven and pour the filling evenly over the crusts.

  7. Put the tray back into the oven and bake for another 25 minutes. Then, put out and cool in the refrigerator.

  8. Top with fresh berries and mint.
