Keto Peanut Butter Fudge

This delicious peanut butter fudge is perfect dessert for your keto diet. It's super easy to make and it's full of healthy fats too!

Ingredients

  • 1 1/2 Cup Natural no-stir Peanut butter (about 1 jar)

  • 1/4 Cup Butter

  • 3/4 Cup Erythritol

  • 1 tsp Vanilla Extract

  • Pinch of Himalayan salt

  • Flaked Himalayan salt for topping

Preparation

  1. Line an 8x8 inch pan with parchment paper.

  2. Put the peanut butter, butter and vanilla into a small pot. Stir over low to medium heat until melted and smooth.

  3. Remove from heat, add salt and erythritol. Stir until combined.

  4. Transfer to the pan and top with peanuts. Put in the freezer and chill for 30 minutes.

  5. Once done, cut into cubes. Sprinkle with Himalayan or Sea salt.
