Red Pesto Pasta with Ricotta Cheese

  • 250g pasta

  • Homemade red pesto

  • ½ cup Ricotta cheese

  • ½ cup dried tomatoes

  • ¼ cup Kalamata olives

  • Pine nuts

  • 1 cup baby spinach

  • 2 tbsp olive oil

  • Himalayan salt and freshly ground pepper


  1. Boil water in a large pot. Add a pinch of salt to boiling water.

  2. Put pasta into salted water and let it soften. Stir the pasta so it won’t stick to the pot.

  3. Check if your pasta is ready. Take a single strand or noodle and bite into it. If it’s chewy, it means the pasta is already cooked. Drain the pasta and transfer it to a big bowl.

  4. Put your red pesto, spinach leaves, dried tomatoes, kalamata olives, and pine nuts on top of the pasta until it is coated well.

  5. Top it with more olives and Ricotta cheese, and season with freshly ground pepper.
