  • 3 egg yolks

  • 1/2 cup olive oil

  • 1 ½ tbsp white wine vinegar or lime juice

  • Himalayan salt & freshly ground black pepper


  1. Crack 3 eggs in a medium bowl. Whisk the eggs while slowly adding olive oil. Be careful not to put too much olive oil.

  2. Add 1 ½ tablespoon of white wine vinegar and a bit of lime juice. Mix well so the flavors are distributed evenly.

  3. Add salt and pepper to taste and whisk well again.

  4. Once done, transfer to an airtight container and put in the fridge for at least 1 hour.
