Recipe: Chicken Fajitas

  • 3 chicken breasts, sliced

  • 3 red bell peppers

  • 3 tbsp avocado oil

  • 1 red onion

  • 1 cayenne pepper

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp Paprika

  • 1 tsp cayenne powder

  • 1 lime

  • Fresh coriander

  • Himalayan salt and freshly ground pepper


  1. Preheat the oven to 200°C.

  2. Cut the bell peppers, cayenne pepper, and onion, then place them to the baking dish. Drizzle with avocado oil, and season with salt and pepper. Mix all ingredients well.

  3. Put in the oven and bake for 10 minutes.

  4. Meanwhile, in a separate bowl,  mix avocado oil, cumin, paprika, garlic powder, cayenne powder, and coriander. Add the sliced chicken breasts, and coat it with the mixture.

  5. Remove the baking dish from the oven, then add the chicken breasts. Bake for 10 minutes.

  6. Take the baking dish out from the oven again, and mix all ingredients, then put it back and bake for another 15 minutes.

  7. Dash with freshly cut coriander and drizzle with some lime juice.

  8. Serve with rice.
