Recipe: Easy Vegan Red Curry

If you're looking to create a healthy vegan dish that's still rich in flavor and texture, look no further than this recipe!

It'll only take 20 minutes to prepare, so it's fitting for days when you're busy but want to stick with a nutritious diet still. 


  • 2 tbsp Coconut oil

  • ½ cup onion

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1 cup carrot

  • 1 ½ cup broccoli

  • 1 red chili pepper

  • 1 tbsp Thai red curry paste

  • 1 cup of coconut milk 

  • Coriander

  • Himalayan salt and freshly ground pepper


  1. Put 2 tbsp of coconut oil in a pan.

  2. Saute onion, garlic, and ginger on medium heat.

  3. Add carrots and Thai red curry paste. Stir.

  4. Add broccoli, and season with salt and pepper.

  5. Add 2 cups of water and coconut milk. Stir and bring to a simmer.

  6. Once cooked, remove from heat and transfer to Karma lunchbox.

  7. Top with chili, ginger, and coriander.

  8. Serve with rice.
