Recipe: Vegan Stuffed Sweet Potato

  • 2 sweet potatoes

  • 2 cloves garlic, minced

  • 1 red chili

  • 1 lime

  • 1 cup red kidney bean

  • 1/2 cup corn

  • 1 scallion

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp Himalayan salt

  • Freshly ground black pepper

  • Freshly cut cilantro


  1. Cut the sweet potatoes in half and bake for 1 hour at 180 degrees.

  2. Scoop out the flesh and transfer it to a big mixing bowl. Set aside.

  3. Leave the sweet potato skins in the baking dish and put back in the oven. Bake for a few more minutes until crisp.

  4. While the sweet potato skins are baking, prepare the filling. Mash the sweet potato flesh in the mixing bowl. Then, add the red kidney beans, corn, garlic, red chili, and scallions. Squeeze some lime juice.

  5. Add cumin, paprika, pepper, Himalayan salt, and coriander, then mix all ingredients well.

  6. Take the baking dish out from the oven and fill the crispy sweet potato skins with the mixture.

  7. Sprinkle with coriander and top with avocado slices.
