Recipe: Red Lentils with Avocado and Salad

Who says red lentils can't taste oh-so-good? Wait until you try this recipe!

In just 15 minutes, you can savor a delicious, nutritious meal that's suitable for any diet -- yup, even vegan!

Ingredients

  • 150g red lentils

  • ½ avocado

  • Red bell pepper

  • Cherry tomatoes

  • Spinach

  • Radish

  • Freshly cut coriander

  • Himalayan salt and freshly ground pepper

Preparation

  1. Cut red bell pepper, radish, cherry tomatoes, and avocado into slices.

  2. Put soaked lentils in a pot and add 400 ml of water. (Note: Wash the red lentils properly first and let them soak for 12 hours before cooking.)

  3. Bring to a boil and let them cook.

  4. Season with salt and pepper.

  5. Add coriander and stir.

  6. Once done, remove from heat and transfer to Karma lunchbox.

  7. Top with sliced avocado and sesame seeds.

  8. Serve with fresh salad.
